The largest distillery on Islay, Caol Ila has occasionally had to run unpeated campaigns to suit its owner Diageo’s blending needs. Some of these very limited editions have been showcased through the much trumpeted “Special Releases” programme, which was originally created to supply a rising demand for unusual, distinctive, rare, and most often than not unrepeatable cask-strength whiskies. This is a vatting of refill American-oak hogsheads filled across 10 different dates. Glints of pale gold draw the eye in.
Nosing releases soft notes of peach and crème brulee, Victoria sponge cake, freshly baked pastries, and gusts of fresh sea air. Sipping reveals an almost creamy texture, followed quickly by notes of custard, fine white chocolate, apricots, and freshly cracked white pepper. A long finished that’s full of coastal vigour, lemon zest, and soft green fruits.
Surely an apéritif whisky if ever there was one...
