High West
High West Distillery, founded in 2006, holds the distinction of being Utah's first legal whiskey distillery since 1870's Prohibition. While its history may not be lengthy, it's more than sufficient for aging American whiskey. In the 19th century, Utah boasted as many as 37 whiskey distilleries, a stark contrast to the present day.
One of the husband-and-wife founders, David Perkins, was deeply fascinated by this once-illustrious whiskey history and Utah's Old West period. This passion is clearly reflected in High West's bottle labels, which feature horses, deer, mountains, and cowboys, all evoking the spirit of the Old West.
Unlike the Kentucky distilleries many of us are more familiar with, High West isn't just a distillery; it also specializes in blending. Beyond producing its own whiskey, High West also sources whiskey from other distilleries, blending different whiskeys and aging them in various ways to create their distinctive products.
