Balvenie is one of the few remaining distilleries in Scotland that still performs all traditional processes on-site—including growing its own barley, floor malting, maintaining its copper stills, and having its own cooperage. A standout feature of Balvenie is its multiple cask maturation approach. For example, the DoubleWood begins aging in Bourbon casks before being finished in Sherry casks, enhancing roundness and aromatic depth.     香港威士忌酒吧 House Welley 今次帶來了一款名為「The Balvenie Castle」的 Single Cask，酒廠名稱經已「畫出腸」，但罕見地不是以 Burnside 之名、亦不是 Blended Malt Whisky，而是簡潔地標明為 Speyside Single Malt Whisky。 酒標上的小女孩，不難看出 House Welley 借此酒向 Banksy 致敬。而女孩手中的那朵玫瑰，那段關於 The Balvenie Castle 的浪漫故事，詳細可以到 House Welley 的 IG 查看。 Official Tasting Note:// 這 36 年 ex-Bourbon cask 第一下是黃桃果醬、黃莓、然後滲透過一陣麥芽，旋即又再發展出奶油和香草、雲尼拿，之後蜜蠟、蜂蠟般 waxy 感跑出來，倒真的有點像其他大廠影子了；然後到口中，青綠色的啤梨、木梨、黃蘋果等多種香氣愈發明亮，51.7% 的酒精度數使結構飽滿而有力，年份卻教它已絲毫無侵略性，再有杏、蜂蜜蛋糕、及最後的黃香李果醬結尾。且上述的元素到你實際品飲時，出場的次序或許有別，因這是一款變化頗多的酒，我們就很享受它的每個面貌了，亦鼓勵諸位不要只試一次，它可是有更多的層次等你發掘呢。//
