Chorlton Whisky - Orkney (Highland Park) 15 Year Old 2005

First up there is a 15 YO Orkney (from the more famous of the two distilleries) - a bottle with HP style but a bit different from HPs in the market. The nose starts with generous notes of oranges, sea water. There are notes of heather honey and a light hint of peat smoke afterwards - some lemon and olive oil cake as well. The palate is oily and chewy, with notes of lemony wax, smouldering wood, stewed cherries and berries, rose petals. It finishes with a fragrant note of heather.

Highland Park

Highland Park’s origins are cloaked in legend, with its founding marked in 1798 but with various accounts of its early ownership. Located in Kirkwall on the Orkney Islands, the distillery expanded under James Grant in the late 19th century and is now owned by Edrington. It continues to use traditional floor malting and lightly peated malt (under 3ppm), creating a signature balance of gentle smoke and honeyed sweetness.

Signature expressions include 12 and 18-year-olds, as well as limited editions inspired by Norse mythology. With warehouse capacity for 28,000 Sherry casks, Highland Park offers deep maturation character and has become a favorite among whisky enthusiasts worldwide.

Chorlton Whisky

The whisky which I picked to bottle, is something I’m excited about and want to drink. Everything else is secondary, but I’d prefer to release “drinkable whisky” rather than anything expensive or rare.’ David Bennett, the founder of Chorlton Whisky told us.

It is never easy to strike a balance among quality of whisky, label design and price, no matter it is an official or independent bottling. However, we discovered that Chorlton Whisky was doing something different. David said, ‘Initially I thought it would be fun to have something unique to share. The ethos now, though, is trying to make single cask whisky a bit more accessible.
