岩 IWA 5 Assemblage 6

Crafted by Richard Geoffroy, the former Chef de Cave of Dom Pérignon, IWA 5 has now released its 6thedition. Like its predecessors, Assemblage 6 is similarly brewed using 3 rice varieties (Yamada Nishiki, Omachi, and Gohyakumangoku) and 5 different yeast strains. IWA 5 Assemblage has no fixed recipe; each edition is a new experiment, personally blended by Richard with the goal of achieving his vision of perfect balance.

Assemblage 6 marks an elegant closure to IWA’s first creative cycle. Its style is composed and elegant, maintaining a balanced and refined flavor from the nose to the palate and the finish. The aroma first presents notes of pear and plum, which then transits into hints of green foliage and toasted rice, alongside with a touch of cocoa and nori umami. On palate it is a bit drier than previous releases, yet remains clear and sleek. Fruit, floral, and marine umami notes gently merge on the palate, with a hint of buttery brioche adding complexity. The lingering finish carries the classic white peppery note.

IWA 5 Assemblage 6 offers a rich complexity of flavors, and Richard recommends pairing it with various cuisines and dishes, while tasting at different temperatures is also well worth exploring.
