This brewery is one of the inaugural members of the 7-brewery collaboration in Miyagi prefecture, and their detailed sake brewing techniques have earned them a lot of popularity ever since. This sake is the regular Junmai Daiginjo of the brewery, it has juicy apple, pear and white peach aromas. The palate is transparent and smooth, with elegant sweetness of fruits, clean yoghurt like savoury tastes, balanced with lively acidity. Mild astringency at the finish but crisp and clean. Overall an easy to drink sake.
Pair this sake with stir fried cantonese dishes, pan seared scallops or fresh oysters.
